Soil: Medium-textured, calcareous-clayey-siliceous in nature
Altitude: 65 mt. s.l.m.
Training system: Apulian sapling, density of 4,000 vines per hectare.
Age of the vines: 40 years
Grapes: 100% Negroamaro
Production: Grapes reduced by 60% in pre-veraison with a wine yield of 50%
Harvest period: late harvest in October with partial drying on the plant, manual harvesting in crates and subsequent drying in the loft.
Yield per hectare: with a reduction of grapes of about 60% in pre-veraison, just 50 quintals of grapes are obtained. The result is a 40-50% wine yield after drying.
Vinification: After the destemming-crushing, the must remains in maceration for 15 days at a controlled temperature of no more than 20 ° -22 ° C.
Aging: aging for 12 months in new medium-toasted French oak barrels, then in the bottle.
Color: impenetrable dark red tending to garnet with aging.
Nose: the nose is broad, with aromas of ripe red fruits, notes of vanilla and spicy tones that evoke toasting and cloves.
Taste: full and velvety accompanied by mellow tannins, balsamic freshness and sensations of withering in the long and persistent finish. A wine of great intensity, structured and elegant.
Serving temperature: 18 ° -20 ° C
Alcoholic content: 16% Vol
