One of the first mentions of this specialty is contained in the book Il Cuoco Galante by the Neapolitan Vincenzo Corrado which speaks of a kind of large stuffed macarone.
Later, in the first half of the nineteenth century, the Arezzo chef Giovanni Battista Maggi proposes a timbale of cannelloni.
