Puer Apuliae or “Son of Puglia”: this is how Frederick II of Swabia was called, emperor of the thirteenth century who, with the Castel del Monte, left an indelible memory of himself to humanity. This wine of great character and elegance is a “Puer Apuliae” because it is obtained from an almost forgotten clone of Nero di Troia selected by Rivera in its Tafuri vineyard.
The vinification in a modern key and aging for 14 months in new barriques have made it possible to obtain a wine whose characteristic aromas of this variety, violet and star anise, are overwhelmingly supported by a very thick palate.

Harvest: Third week of October. Yield of 50-60 q / ha
Vinification: Maceration for 20 days at 28 ° C with pumping over, delestage and micro-oxygenation.
Aging: 14 months in new French oak barriques – 12 months in the bottle.
Tasting notes: Impenetrable purplish red; intense bouquet of small black fruits with notes of violet and star anise; palate of great density and elegance, very long.
Food pairing: The complexity of this wine requires pairing with foods rich in flavors and a good set of fats: large roasted red meats, furred game, meats based on strong sauces and aged cheeses. It should be served at 18 ° -20 ° C after suitable oxygenation.
